Sweet Mango Delight

Since it is mango season now,this dessert has been made from mangoes and milk which the children and the whole family will enjoy. No eggs are used and is extremely easy to prepare.

Serves four to six people.


























































Ingredients Quantity
Ripe Mango puree 1½ cups
Crushed Marie or Glucose Biscuits 1 cup
Melted Butter 3 tbsps
Powdered Sugar 1¾ cup
Hung Curd 1 cup
Cream ½ cup or more
Gelatin 1 tbsp
Water 4 tbsps
Cut Mango pieces for decoration a few


Method

  1. Take butter in a small dish and melt it either in a microwave or on the gas. Pour it over the crushed biscuits and mix it well and spread it evenly at the bottom of the serving dish evenly and firmly by pressing with your fingers.

  2. Put this dish in the oven for few minutes till the biscuit mixture becomes firm and sets.Keep it aside.

  3. Take a blender jar and add the ripe mango puree,sugar and blend well.

  4. Then add the hung curd,cream and gelatin dissolved in warm water and blend it again till mixed well.

  5. Pour this mango mixture over the biscuit mixture in the serving dish and decorate it with mango slices and set it in the refrigerator for a few hours.

  6. Serve cold slices of this dessert.

La Mango Dessert

This mango dessert is very interesting because it contains layers of icecream,breakfast cereal and mango fruit pieces. Other fruits or mixture of fruits can be used also. It is easy to prepare also. It is crunchy because breakfast cereal has been used. Here fruit loops have been used. Other varieties of cereal can also be used.Makes one serving.





































Ingredients Quantity
Condensed Milk 3 tbsps
Vanilla Ice Cream 1 medium cup
Breakfast Cereal 1 cup
Mango Puree ¼ cup
Ripe Mango Pieces from 2 mangoes



Method

  1. Take condensed milk,vanilla icecream and mango puree in a bowl and whisk it with a blender well. Keep it aside.

  2. To serve,take a tall glass or a goblet and place two tablespoons of the icecream mixture at the bottom,then place a layer of mango pieces and then a layer of cereal{loops}. Repeat this layering till the cereal is the top layer.

  3. Sprinkle some fresh mango pieces on top and chill this glass in the fridge and serve it cold.

  4. Note:Instead of icecream and condensed milk, whipped cream and sugar can be used.

Smoothie made with coconut milk and mango is very wholesome and refreshing too.This smoothie can be had for dinner with some sandwiches.Other seasonal fruits like strawberries,bananas or peaches can be used instead of mangoes.

Mango Wedges 4 large
Coconut Milk 1 ½ cups
Sugar 2 tbsps
Ice Cubes 6 or 7
Lime Zest from one lime



Method

  1. Take the fruit wedges in a blender and blend it.

  2. Add the coconut milk,sugar,ice cubes and blend it until smooth.

  3. If extra sugar is required, it can be added.

  4. Serve chilled with shredded lime jest on it or finely chopped mango pieces.

Come Summer, there is plenty to eat nice ripe sweet mangoes! This wonderful Indian fruit can be included in our cooking other than desserts. They can be used in salads which gives a tinge of sweetness to the salad.This cool salsa recipe can be eaten by diabetics too once in a while.This recipe can be relished by all and for children the spicy green chillies can be avoided. This serves about six people.



































































Ingredients Quantity
Tomatoes 3
Onion 1
Capsicum 1
Ripe Mango 1
Finely Chopped Green Chillies 1 tbsp
Chopped Cilantro 1 tbsp
Boiled Chick Peas (Kabuli Chana) ½ cup
Lime Juice 1 tsp
Black Pepper Powder 1 tsp
Salt to taste
Olive Oil (Optional) 1 tsp



Method

  1. Cut the peeled mango into small cubes.Chop the tomatoes,onions and capsicum or green pepper into fine pieces.

  2. Take a bowl and add all the chopped vegetables,chick peas,ripe mango cubes,lime juice,green chillies,cilantro, salt and black pepper powder and mix well but lightly.

  3. Add the olive oil and mix gently and cool it in the refrigerator.

  4. Serve it cool with bread or in canapes or with chappatis.

Cool Mango Panna

Cool Mango Panna - Ramani's Recipes

Cool mango panna is a cool drink best for Summer especially to beat the heat in the afternoon.This drink can be made and stored in the refrigerator for a few days.

This recipe gives you two or more glasses.





































Ingredients Quantity
Raw Mango 1
Sugar ½ cup
Salt ½ tsp
Roasted Cumin Powder 1 tsp
Water 3 to 4 cups



Method

  1. Cook the washed mangoes with a cup of water in the pressure cooker till soft.

  2. Cool them and squeeze out the juice from the mango by adding water.

  3. Add the sugar,salt and cumin powder and mix well till the sugar dissolves. If the mango is very sour,more water or sugar or both can be added.

  4. Chill the juice in the refrigerator.

  5. Serve this panna in glasses decorated with mint leaves.

Mango Rice - Ramani's Recipes
Yet another recipe with mangoes which is used in a different way.Grated mango is mixed with rice like lime rice or tamarind rice.This is very easy to make and tasty too as it has the mango flavour. This dish is rich in Viamin C. This is for three to four people.

























































































Ingredients Quantity
Grated Raw Mango ½ cup
Cooked Rice 1 tbsp
Chopped Green Chillies 1 tbsp
Turmeric Powder ½ tsp
Cashewnuts 6 or 7
Peanuts 1 tbsp
Bengal Gram Dhal (Channa Dhal) 1 tbsp
Black Gram Dhal (Urad Dhal) 1 tsp
Mustard Seeds 1 tsp
Asafoetida a pinch
Red Chillies 2
Curry Leaves 1 tbsp
Salt to taste
Oil 2 tbsps
Pappads 6



Method

  1. Take a pan, add the oil and heat it.

  2. Add the channa dhal,urad dhal,mustard seeds,asfoetida,red chillies and peanuts and fry till light brown in colour. Add the cashewnuts and fry them too.

  3. Add the green chillies and curry leaves.

  4. Add the tuimeric powder and grated mango and saute it for a few minutes.

  5. Add salt and the cooked rice and mix well so that it is hot and well blended. Remove from the heat.If the mango is ver sour ou may need more rice or less of the grated mango.

  6. Serve the mango rice garnished with curry leaves and pappad.

Mango Ginger Garlic Chutney

Since it is the mango season this chutney can be prepared and preserved for three or four months. To stay longer, it can be kept in the refrigerator.




















































Ingredients Quantity
Grated Sour Mango 1 cup
Ginger 50 gms
Garlic 50 gms
Red Chilly Powder 3 tbsps
Roasted Fenugreek Seeds (Methi) 1 tbsp
Cumin Seeds 1 tbsp
Salt to taste
Oil 6 tbsps



Method

  1. Powder the roasted fenugreek seeds and cumin seeds together.Grind the cleaned ginger and garlic to a fine paste.

  2. Take oil in a pan and add the oil and heat it till it smokes and remove from he heat.Cool it till it is warm.

  3. To this oil add grated mango,ginger garlic paste,methi and cumin powder,red chilly powder and salt and mix well.Cool the mixture and store it in a clean bottle.If the mangoes are sour it will stay longer.

  4. This delicious chutney can be served with hot rice or with dosas and utappams.

Come summer, and the mangoes are there! All over India,there is some dish or other made with raw or ripe mangoes every other day.It can be a dhal or mango rice or a cool and soothing drink or a chutney and the most supreme is the famous Indian mango pickle. In the South the pickle is made differently from the north or even he West or the East. Here I have given a typical Andhra recipe which is made with lentils or dhal and raw mango.It can be made spicy too! This recipe is for four or five people.



















































































Ingredients Quantity
Toor Dhal ½ cup
Raw mango Pieces ½ cup
Oil ½ tbsp
Green Chillies 2
Curry Leaves a few
Garlic Cloves 10
Red Chillies 2
Turmeric ½ tsp
Red Chilly Powder 1 tsp
Black Gram Dhal (Urad Dhal) 1 tsp
Mustard Seeds 1 tsp
Fenugreek Seeds (Methi Seeds) ½ tsp
Asafoerida (Hing) ⅛ tsp or a pinch
Salt to taste



Method

  1. Cook the dhal with tumeric powder in a pressure cooker till it is soft.Cook the mango pieces also seperately. Mix the dhal, mango pieces and salt.

  2. Take oil in a pan and add the seasonings like urad dhal, fenugreek seeds,mustard seeds,asfoetida and fry till the mustard seeds splutter. Then add the curry leaves and garlic cloves and fry till light brown. Turn off the heat .

  3. In this hot oil add the chilly powder and do not let it burn and become black in colour.

  4. Add the seasonings to the mixed dhal and mix well. It can be heated once again to make it hot.

  5. Serve this dhal with hot rice and curd chillies.The red chilly powder is add to tone down the sourness of the mangoes and also to make it spicy. For children, the red chilly powder can be avoided.
